Madison is a dining-obsessed town, with many restaurants and types of food to choose from. Sometimes, the choices can be overwhelming. We decided to make it more manageable, compiling a group of 40 local restaurants worth getting to know -- depending on what type of food you're in the mood for. Here are some ideas to whet your appetite, broken down by category.
For burgers: Dotty Dumpling's Dowry

Back in the day, Dotty Dumpling's Dowry was one of the more colorful things about Madison, mainly due to its owner, founder and "Hamburger King" Jeff Stanley. Its Fairchild Street spot was its most famous, but Stanley had to leave it in 2001 to make way for the Overture Center. The restaurant is now operated by Stanley's daughter near the Kohl Center.

When executive chef and co-owner Tory Miller created the Graze Burger, he wanted to make a burger that was a step above the rest. The burger uses Wisconsin-raised meat, along with Swiss cheese from Mineral Point and red wine caramelized onion to elevate the eating experience.

Another long-time restaurant in Madison (about 67 years), Paisan’s is a great place for large groups because of the roomy space and great service. The menu items are quite similar to its sister restaurant Porta Bella, which means the food at both places is exceptional.
