Gil Altschul is opening Grampa's Pizzeria, his late-night artisan pizzeria Wednesday, almost exactly on schedule, which is extremely rare in the restaurant business.

"Our schedule was July 9 actually. We're one day late. We got held up with the fire inspection," he said.

Altschul said he set the opening date April 1, when he took over the space of the former Grampa's Gun Shop, 1374 Williamson St.

He said he is going to initially limit the amount of carryout he does to concentrate on the diners who eat in the restaurant.

"We're grateful for all the buzz and excitement that has surrounded this project for the last three months," Altschul said.

Grampa's opens at 5 p.m. daily. Monday through Thursday it closes at 2 a.m.; Friday and Saturday at 3 a.m.; and Sunday it closes at 9 p.m.
