Freiburg Gastropub is moving to State Street and will be known as Freiburg Tap Haus.

For Madisonians who mourned the news that Freiburg Gastropub would be closing on Monroe Street after three years, mourn no more. The German restaurant and Wisconsin Brewing Tap Haus will be revamped into a new restaurant known as Freiburg Tap Haus at 107 State St.

Freiburg Gastropub and Wisconsin Brewing Tap Haus are both Noble Chef Hospitality Group restaurants. The group also operates the Ivory Room Piano Bar and Buck and Badger Northwoods Lodge. Jack Sosnowski is president of the Noble Chef Hospitality Group.

The new concept, Freiburg Tap Haus, will take “the best of both worlds from the Tap Haus and Freiburg Gastropub,” Sosnowski said. The venture will take over the Wisconsin Brewing Tap Haus location, and will be a little more casual than the old gastropub at 2616 Monroe St., he said.

He’ll keep the “greatest hits” from the Tap Haus menu, like reuben rolls and pulled pork, which will be offered alongside German dishes like weinerschnitzel. There will be 19 beers on tap. About half will be American craft beers, and the other half will be German beers that were popular at the gastropub.

After accepting an offer for the Monroe Street gastropub, Sosnowski said he “kicked around” the idea of bringing the restaurant to State Street. At the time, when asked about his reasons for closing the Monroe Street location, Sosnowski said that he “had his hands full” with multiple restaurants and three small kids.

“It’s hard to stay away,” Sosnowski said. “Once you're a restaurateur, you’re always a restaurateur.”

He noted that having all of the Noble Chef’s restaurants close to State Street will make his job as a “very hands-on owner” easier.

The 107 State St. location was closed down Monday for renovations to give it “a little facelift,” Sosnowski said. Sosnowski plans to open the new restaurant in mid-May, which will be a good time to take advantage of the patio, he said.

A new restaurant, The Tin Fox, will soon take over Freiburg Gastropub’s old home on Monroe Street. The family-run restaurant plans to serve “New American fare” and serve brunch, lunch and dinner.
