Chef Jason Kierce runs the kitchens at Hillel at the University of Wisconsin-Madison, including Adamah Neighborhood Table on Langdon Street.

Jason Kierce didn't even know what Hillel was when he first got a job at the Jewish student center on the UW-Madison campus. Now, he says, if there was a kosher Trivial Pursuit, he'd do pretty darn well. 

Cooking a true kosher meal requires attention to detail, observation of Jewish law and the oversight of a mashgiach to attend to every leaf of lettuce. This week on the podcast, Kierce shares his experiences creating the menu at Adamah Neighborhood Table and how he's using food to build cultural bridges.
